Bali coffee is a type of Indonesian specialty coffee cultivated in the tropical environment and nutrient-rich volcanic soil of Bali's Kintamani district, near the Mount Batur caldera. Top Bali coffee varieties like Bourbon, Typica, and Catimor grow in shaded areas of lush forests at 3,900-5,200 feet elevation, undergoing handpicking and a two-step sun-drying process by small family farms. These farms, utilizing a few acres, grow Indonesian coffee alongside citrus trees in volcanic soil, meticulously processing their harvest through overnight fermentation and patio drying.

The unique process involves removing the parchment at a high moisture level, giving the beans their distinctive color. Balinese coffee cultivation, deeply intertwined with the Subak Abian system and Tri Hita Karana philosophy, eschews pesticides and synthetic fertilizers, emphasizing harmony between the environment, humanity, and spirituality. Bali's Arabica varieties, including ateng, buhun, and sigararutang, offer health benefits with metabolites like trigonelline, citric acid, and quinic acid. Nizar Happyana's 2021 research at the Bandung Institute of Technology shows their potential for blood sugar control with alpha-glucosidase inhibitory activity, exhibiting IC50 values ranging from 3.01 to 5.05 mg/mL.
